A delicious ice cream sundae, the perfect summer dessert.

This is a delicious and super easy way of knocking out a dessert in a hurry! The icing on top is that it still tastes great and should appeal to all ages.

It obviously needs to be assembled when you are ready to eat it but you can still make a few bits ahead of time and then you are ready to go.

You can also change the chocolate sauce to a delicious caramel instead, which is also just as easy. Just melt sugar and syrup in a pan as per instructions and add 90g cold butter cubes in place of the chocolate and then continue with the cream and stir until completely cooked and creamy.

Serves 4 

Ingredients 

  • 4 scoops banana ice cream
  • 4 scoops vanilla ice cream
  • 2 ripe bananas, sliced
  • 50g golden syrup
  • 100g caster sugar
  • 1 tsp. ground cinnamon
  • 150g chopped milk chocolate
  • 150ml double cream
  • 1 tbsp. icing sugar
  • ½ tsp. vanilla extract
  • 25g flaked almonds, toasted

Method

Start by whipping half (75ml) of the double cream with 1 tablespoon of icing sugar and the vanilla extract. 

You will want the cream to have soft peaks, and then place in the fridge until needed. 

To make the sauce, place the sugar, syrup and cinnamon in a small saucepan and place on a high heat. 

Bring to the boil and leave the heat on high for around 5 minutes, stirring all the time.

Remove from the heat and allow to cool for 5 minutes, and then add the chopped chocolate and stir until smooth and no lumps, then add the remainder of the double cream and again stir until completely incorporated and the sauce is smooth and glossy.

To assemble the sundaes, place a scoop of the vanilla and banana ice creams in the bottom of a sundae glass. 

Then place some sliced banana on top followed by some fudge sauce. 

Top the sauce with some whipped cream, and top with sliced, toasted almonds.
