Pub legend Bob Tweedy opening Ruby Lounge + Kitchen in former Uluru Bar

Ruby Lounge + Kitchen will open this Friday, April 11.
After a break of over 15 years, Waterford publican and businessman Bob Tweedy is back.
Having purchased the former Uluru Bar & Restaurant in 2023, the premises is currently undergoing a substantial refurbishment and will reopen on April 11 as Ruby Lounge + Kitchen, also incorporating Monaco Tom’s Bar.
This refurbishment represents a further investment of over €2 million, with the renovation work being carried out by local builders DFL. Bob wanted to make special mention to David Flynn and all his crew for the excellent work in delivering the project on budget and on time.
Speaking about the venture, Bob said, "I didn’t think it would take 15 years, but it’s good to be back."

"The Ruby name, I believe, brings back a lot of happy memories for many people in Waterford - and for me as well," Bob added. "I’ve chatted to plenty of our current customers who would tell me they met on the dance floor of Ruby’s back in the day, so there’s a strong sense of nostalgia in reviving the name.
"Like the Ruby Lounge of old, we have a strong line-up of live music," Bob explained. "We want to deliver a consistent, high-quality hospitality experience in a friendly, comfortable, neighbourhood environment."
When asked about the name Monaco Tom’s, Bob explained the name is a tribute, an acknowledgment, and a thank-you to his business backer and close friend, Mr Tom Robertson - a character, gentleman, and proud Scotsman who is retired and living in Monaco.

"Like any project, Tom’s investment is based on the numbers, but more so in this case on our friendship and the belief Tom had in me and my vision," Bob said. "Coming from a building background himself, he’s taken a keen interest in the project as it has developed."
On the refurbishment itself, Bob described how the premises, as he took it over, was dated and tired. The first thing to go? Anything to do with kangaroos or Kilkenny!
"Not that I have anything against kangaroos," he joked.
The complete renovation includes a new lounge area - Ruby Lounge - and Monaco Tom’s Bar. The lounge will feature an industrial chic aesthetic, while the bar will embrace a more traditional style.
"Our food offering will retain our renowned carvery while also introducing an exciting new evening menu and breakfast/brunch options," Bob shared. "Full details will be posted soon."
Bob and his team are looking forward to welcoming both old friends and new faces on April 11, "reliving cherished memories and creating brand-new ones".
Doors are open at 8.30pm and live music is by the Jam Tarts Duo.
