The Tannery restaurant in Dungarvan is closing its doors next year.

In a post on social media, co-owners and partners Máire and Paul Flynn said: "If someone had told us in 1997 that our little restaurant in Dungarvan would still be going strong 30 years later, we would have signed up on the spot. We’ve had the run of our lives."

The Tannery is one of the most popular restaurants in Dungarvan and a personal favourite spot of celebrity chef Eunice Power. It was a key player in the annual Waterford Festival of Food, which has welcomed a long list of internationally notable chefs. The Tannery kitchen itself has also produced a number of eminent alumni, including Mickael Viljanen of Michelin-starred Chapter One.

However, according to Michelin star chef and restaurateur Paul Flynn, this is not the end of the Tannery's story. He and his wife, Máire - a front of house extraordinaire - will be transforming the restaurant into a cookery school.

They said: "Hospitality, flavour, generosity, and a little craic are still very much the plan."

The couple and co-owners also paid tribute to their staff, their daughters and the Dungarvan community.

They went on to explain that: "There won’t be one farewell party. Instead, the next eleven months will be one long celebration."

Their last service will be January 1st 2027, giving regulars, old friends, and first-time visitors a chance to be part of their final service season.
